About sake (comment from the brewery)

We brewed this product using the precious rice of Hiroshi Arai, who grows rice naturally without using fertilizers or pesticides in the rice fields around Maruyama, which is surrounded by the woodlands of Mitsui-cho, Wajima City.
Growing rice through natural cultivation, which is most influenced by various environments, can sometimes be under harsher conditions than you might imagine, but the naturally cultivated rice that grows through this process is strong yet resembles a grassland. It has a refreshing flavor.
This sake also strongly reflects the characteristics of naturally cultivated rice, resulting in a sake with a clear taste that gives you a sense of purity. This is a rare sake brewed from the nature-rich Satoyama of Oku-Noto Wajima.
